Primary responsibility is to cut portion controlled Steaks and Chops and assist with all prep duties as needed. Accurately portion product achieving consistency and high yields, reducing the need for extra trimming resulting in lower product yields.
In order of importance (most to least), briefly describe 4-6 primary responsibilities of the position, and approximate the percentage of time spent on each.
% of Time
Provide technical, customer relations, and personnel management for major programs and projects.
Manage cut station - order raw materials needed to fill cut tickets - set station up in a manner that maximizes product flow
Cut Steaks and Chops to the highest yield possible following each customers individual specifications
Assist with prep duties as needed
Complete a minimum of four cut tests per week
List the minimum required levels of Education, Experience, and Special Skills needed to perform the responsibilities of the position.

Two years minimum knife and portion cutting experience

Ability to identify raw materials and cut steaks, Full understanding of proper trim levels
