Primary responsibility is to cut portion controlled Steaks and Chops and assist with all prep duties as needed. Accurately portion product achieving consistency and high yields, reducing the need for extra trimming resulting in lower product yields.
- Manage cut station - order raw materials needed to fill cut tickets - set station up in a manner that maximizes product flow
- Cut Steaks and Chops to the highest yield possible following each customers individual specifications
- Assist with prep duties as needed
- Complete a minimum of four cut tests per week
Experience: Two years minimum knife and portion cutting experience
Skills: Ability to identify raw materials and cut steaks, Full understanding of proper trim levels
